What is Ofada sauce?
A traditional Nigerian pepper sauce, made with red peppers, onions and spices. Hot, smoky, and usually served with Ofada rice, beans, plantain or assorted meat.
What is Ayamase?
The green pepper stew, often called designer stew. Made with green peppers instead of red. Sharper and brighter than Ofada, and traditionally served the same way.
What is actually in the pouch?
Dried peppers, blended in the proportions the traditional recipe calls for. Ofada is scotch bonnet, chilli, red bell pepper, onions, herbs and spices. Ayamase is the same with green peppers.
How do I cook it?
Empty the contents of one pouch into a bowl. Pour in 500 mL (2 cups) of freshly boiled water and leave to soak for 20 minutes. No stove needed at this stage.
Then heat about 200 mL of oil, palm oil if you have it. Add onion and iru, fermented locust bean, if you like. Carefully add the rehydrated pepper. Fry on high to start, then reduce to medium-low and cook for about 30 minutes, stirring regularly, until the oil separates and rises to the surface. Stir in your cooked protein, season to taste, simmer and serve.
How hot is it?
Hot. These are scotch bonnet peppers and we have not toned them down. If you want it milder, add tomatoes.
How much does one pouch make?
About 1 litre of sauce.
Does it contain allergens?
No priority allergens. No mustard, sesame or sulphites.
How long does it keep?
Unopened, 12 months. Check the best-before date on the pouch. Store in a cool, dry place. Refrigerate prepared sauce within two hours in a sealed container and use within 3 to 4 days, or freeze.
Do I need to refrigerate the pouch?
No. It is shelf-stable until you open it.
